Where has time gone?

I'm not much of a writer however I love to talk so that helps 😄 

My dream job when I was little was to write a children's book and be an artist. Those of you who know me know that I am neither.

I didn't dream of being a mom like other little girls did. I dreamed of being a confident author or journalist. 

 However I am very grateful God changed my heart and put his plan in effect for my life.

I love being a mother. To me I don't need to be the most successful author or a business women. I am very content with my humble messy life.

Being a mom is what I want to do.

It is enough for me. I am not saying I do not want to back to school.  I do but that will happen in Gods timing not mine.

To me impacting the lives of my children is what I'm here to do.
When it's all over and my time has come to meet my maker I want to know I loved on my family as much as I could have. I want to be there for every time they fall and be there to cheer every time they succeed.

My life is perfect just the way God intended it to be.

Our goal is to take a family photo for a year every Sunday until next Easter. While I enjoy it the other members are ready for it to end.

 We are so excited our family is growing!

 We went on our first family road trip! It was Liam's first time to the beach! I do not think I have ever loved the beach more than seeing it through my little ones eyes. We are already planning our trip back next year. I am also still craving on of the jumbo burritos there! 
We went on a spontaneous camping trip. We loved spending time outside together. Liam loved his first time at the lake! He didn't even want to go inside to sleep. It was also his first time sleeping in the same room as other family members! 

I think that's a quick catch up.  

We are absolutely loving fall here.

Starting the week with a toothache

I will admit I was intrigued by the many post about making blueberry muffins in a waffle maker. I had to give it a go. 

It was simple enough to add it to my Pinterest inspired completed list (a very tiny list) 

I forgot to tell my husband it was muffin mix as he poured syrup all over his "waffle." 
He was not impressed. I slightly agree with him. 

The package makes two waffles. The package states the serving size is 6.  I hate enough muffins for 3 people! 

Someone please tell me there is a better recipe? I'm starting my week out guilty eating my waffle!

Pinterest inspired.

This is by far one of my favorite Pinterest inspired toddler activities. 

This is for you who just repin like me or are often intimidated. This is a no fail project. 

{All you need is a wipe container, saved pouch tops and tiny hands.}

We went through a phase where all he wanted was a pouch. Now not so much. It really helped that my mom works at a Mother's Day out. Ask friends to save them for you! 

I keep this in my room so when I want a few extra minutes or shut eyeor to keep him busy for a few minutes. 

This had been so good for his condination. I  wish I could say he knew his colors with all the playing we do with these. We are enjoying working on them!

1st birthday

Happy birthday sweet boy. I can not believe it has been a year that we have been able to watch you grow! How time has flown. You are the sillies most clever little guy. You love to laugh and make mommy and daddy laugh. You are filled with so much joy. 

You are such a determined little boy. To you there is nothing you can't do. Especially knock down a whole cake out of the freezer or climb on top of the table. Don't get me started on what a climber you are. You keep me on my toes that's for sure and you make life exciting. You look at everything as a new challenge. 

You made me a mom. As I'm writing this I'm crying. Tears of joy of course. I hope one day you realize just how much you were wanted. You have taught me so much but mostly just to love every second. We are not the best first time parents but we had so much fun learning with you.  There have been some bumps in the road but I wouldn't change them. Sorry you had to learn with me but you were the very best first child I could have asked for. 

I love getting to spend every second with you because you are a constant reminder of just how fast time flies. (also I have to spend every second with you because you will get into something as soon as I turn my back). I wish I could make you stay one forever. You are at such a fun age. I can not wait for you to wake up to sing happy birthday a million times because for some silly reason you love that song. 
We still do not know how we are so blessed with a happy little boy. Thank you for a wonderful first year. I can not wait to see what this next year holds for us. I am honored to be your mom.

Send lots of cookies

Today was an exhausting day.

I keep saying in my head "a terrible, horrible, no good, very bad day."  (I need to purchase  that book.)
I keep reminding myself that everyone has an off day. I wish someone would have told me before I had my son to: 

learn to grocery shop as if you are being timed 
learn to hold a million things in your hands while balancing a baby on your hip
always be stocked with lots of tissues
have a never ending supply of Girl Scout cookies 
And learn to cook one handed. 

I love the new challenges motherhood brings but I will admit my favorite time of day might just be bed time.

My family's favorite

It's funny how something so simple can be a favorite. I want to share our favorite dinner recipe

I loved the recipe as a good base for a larger meal. I tease my vegan friend I will try anything vegan or vegetarian if I can add meat or cheese. I am a recovering vegetarian of 7 years.

Here is what I changed.

I cook 12 noddles and lay them flat in a glass pan. I layer the zucinni paste, cheese, and we add ground turkey. I make about 3-4 layers.

My husband could eat this everyday. It is so tasty and easy. My 10 month old loves it.

Happy 10 months.

I am not believe my little man will be a year in just two months. Happy 10 months my sweet boy. 

I didn't believe this phrase until he was born. 

"The days are long but the years are short." 

It's time to really start planning his party. I would love for some ideas! If you see anything to go with out theme of "into the woods" let me know!! 

I would love some  tips on what makes a successful party. What you wish you had given  more attention to or what you stressed over and in the end wish you hadn't.

I need you just as much as you need me

You are my shopping buddy, my lunch pal and the reason my camera doesn't collect dust

You remind me to laugh and how to love unconditionally. 
You are always around to make me smile

You bring out the best in me

I strive to be a better mom, a better friend and better listener because of you. 
You may be little but you are already impacting me greatly

My hair needs washing and there is a pile of dirty dishes in the sink but when I'm with you none of that matters.

I never know something this small would impact me so much. I can't remember life without him. Do you have anything that means this much to you? A certain person?

Loving... I joined a new group of Local photographers. I am loving their encouragement and their talent. It is so fun to be a part of a group of moms that have the same interest.

Thankful... A few minutes to catch up on blogging. My little one keeps me so busy.

Counting down... To the summer. I am so ready for it to be summer. We are hopefully taking a vacation this year!

Organizing... Our house and garage. We have lived in our house for almost two years and I finally am ready to decorate. My dad told my husband he could have his pool table. My husband is so excited so he is making space for it in the garage.

Watching... I am letting Netflix run in the background while I blog. I have been watching Rules of engagement.

Celebrating.... We celebrated our first Valentines day with our little man. My husband is not a huge fan of valentines day but we did have fun with the little one this year.

Eating... Tacos. I love when my husband doesn't have to go into work too early because he makes or buys us breakfast.

Spinach muffins

I am always trying to find new ways to sneak vegetables in my foods without tasting them. I was so excited to try Popeye muffins from the green fork   My son loves everything so I decided to give these spinach muffins a try. 
They are amazing and you wouldn't even know they have a whole bag of spinach. I'm very much like a kid the color is more enticing to me.

Spinach Muffins 
Serves: 16 muffins
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp salt
  • ¼ cup canola oil
  • ¾ cup milk
  • 1 (6 ounce) bag fresh baby spinach
  • ½ cup mashed banana (from about 1 to 2 bananas)
  • 2 tsp pure vanilla extract
  1. Preheat oven to 350°F and line two 12-cup muffin pans with paper liners.
  2. Whisk together dry ingredients in a large bowl: flours, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a blender, place oil, milk, and spinach. Blend on high for about 30 seconds or until completely puréed. Add banana and vanilla; blend on low just to mix.
  4. Pour puréed mixture into dry mixture and fold together with a rubber spatula until completely combined.
  5. Fill muffin cups about ⅔ full and bake 18-20 minutes or until a toothpick inserted into the center comes out clean.

Interest has its way of making me feel like the worst mom, wife and cook all within 5 minutes of browsing. I am a Pinterest addict. That does not mean I ever try to recreate but I just pin and wish I had the time. I browse through the cooking section and tell myself "wouldn't that be amazing for dinner?" I then proceed to make spaghetti. (our go to meal)

I find myself looking in the kid section more than the women's fashion section because lets face it as a mom my kid comes before my lack of style.

I am not a huge valentines day enthusiast. I am not like my parents crazy neighbors that have inflatable hearts in their front yard. For one I did not even know the sold those?!
I am however all for looking Pinterest for valentines ideas for my little man. He was invited to a valentines party with his baby friends. I was so excited to find an easy healthier option for the little valentines.

Aren't these just the cutest? What is one thing you have recreated inspired by Pinterest? I may have to attempt it or at least repin it :)

Call me Aunt

As some of you know my brother and sister-in-law had their baby yesterday.  
I knew I would be excited to be an aunt to my one of my siblings first child but I never imagined this much. I am so in love with the little boy. 

Here are some of the reasons why I love being an aunt so far. It's only been two days :) 

  1. I am so excited to see my little man and his cousin grow up together. I often wished I had a cousin close to my age. 
  2. I am able to love on the little boy but I can hand him back to his parents when he poops or cries.
  3. I did not realize it was possible to find another baby almost as cute as you do your own. It is because we have the same genes :) 
  4. The new baby smell is amazing 
  5. My husband can get his baby fix. 
  6. I love having someone to talk to about baby stuff. I am excited for my brother and sister in law to get to understand the joys and the honor of being parents. I am also excited for them to go through the hard times together.  This will bring us all closer.

I love my new title as aunt. I wish I had a cooler name then aunt Amy. My brother is Uncle Doodoo and my sister is Aunt DeDe. Should I stick with Aunt Amy? Do you have any suggestions?

When life gives you apples

Make apple sauce!

I had two apples I needed to use so I decided to make apple sauce. My little man could eat strawberries all day. I decided he needed a slight change. In his I didn't add anything but apples and strawberries. 

I boiled one cup of water 
Added the apples
Cooked until a fork could easily pierce (about 10 minutes)
Purreed and added strawberries. 

I didn't have time to find a recipe nor did I want to add sugar and butter. He loved it. 
I added a little cinnamon and lemon to mine. 
It was quick and simple. 

I'd love to hear your recipes. What should I do different?  I would love to know what your favorite quick homemade recipe it doesn't have to be apple sauce!

Messy with a touch of sprinkles

My little one's favorite toys right now are Tylenol, sprinkles and a glass container of coconut oil. He crawls around all day with these items. 
He gets so mad if you try to take them away. We have been using the cocunut oil for his chapped nose and lips. Poor baby is getting his top 4 teeth.

Thinking about...
What I'm making for dinner. We need to go grocery shopping for the week. I feel like this is what I'm always thinking about. I wish I was that wife that had dinner ready before her husband came home but that is never the case. I'm a picky eater and with a little one I'm always busy. 

I'm craving a frosty from Dairy Queen. After I gave birth with my little man (9 months ago) my brother brought me Dairy Queen. Well now my sister in law is due any day with my nephew and we decided to make it a tradition. I'm excited for his arrival but also craving the frosty. 

I could crawl into bed and take a nap. 

Revenge or at least trying to between my sons naps.   I can't wait for Nashville to start but also sad this is the last season this week of Parenthood. 

At the pictures of the littlest messy member of our family. He absolutely loves strawberries and I tease he is going to turn red. Today his hands and face were stained a little after breakfast and I had to take some pictures. 

Thankful for.. 
I'm thankful for this gorgeous weather we have been having lately. It winter here in sunny Texas but we are loving the warm temperatures. My little man loves being outside so I'm thankful we do not  have to bundle up.

Am I doing my best?

We all have rough days, Days we doubt ourselves. Some days are just simply just better than others. Somedays all we can do is crawl in bed and wait for the next day. 

There isn't a manual on how to be the perfect mom or how clean your house should be. Yet there is this crazy competition that makes us seem like we are not meeting the guidelines. Being a woman, mom or a friend is not a competition! Do you hear me? It's not a competition. Do you feel this pressure? 
We are not show dogs. We don't always have to have our hair done or be the most popular. 
As a women we are constantly wondering if we are doing our best as a mom, wife... you fill in the blank.

Today I was reminded that my little man doesn't care if my hair is a mess or if I'm winning some competition.

So why am I so hard on myself?

I challenge you to encourage someone before this week is over. Even if it's something simple. 
Let's not try to "one up" each other but lets use our mommy muscles and lift each other up.

Something small

It is the small things that make life exciting. Yes the big things are pretty great too but the little ones are worth noticing and far to commonly overlooked.

 Today my little man learned to clap. I know that is such a small thing but today for me in my crazy life that is the cherry on top of the cake.

I am not going to overuse the saying about smelling the flower but there is so much good in this world to just overlook it. We are constantly in a hurry all the time. Having a little boy has reminded me to just laugh and embrace the stain on my freshly washed jacket.

Always and forever my little man

Dear Liam,

This is one of many letters my baby that I will write to you. My eyes are already filling with tears and I have barley started. You have learned to say mama and my heart is so full with love for you. Everyday I am amazed with how much love I have for you. You are so kind, silly and so adventurous. You make everyday a challenge but so rewarding. Hearing you say mama remindes me what I am here to do. Sometimes life is chaotic and it seems like getting to the next day is hard but with you each day is a blessing. I love watching you grow and meet each milestone. You are so active and determined. You literally climb over me to get to what you want. You have not stopped moving even when you were in my belly. You have so much joy in your heart little boy. I pray that you always continue to share that wonderful smile of yours. I pray you will never let that adventurous side of you cease. I pray that you will always continue to climb over obstacles and push towards your dreams. Mommy wants the very best for you little man. You are the one who made me a mom. You are the one who showed me what life is really about. 

Always smile and never be afraid to take risks, mommy will always be here.

I wish I was an octopus.

We took our little man to the zoo for his first time this past weekend. He loved the goats, fish, birds, monkeys and the kids area. It is so much fun seeing him experience new things.

My husband said while we were feeding the fish "I wish I was a fish. How nice it would be to just swim around carefree all day."I know he was joking but I couldn't believe out of all the animals he chose a slimy fish.

This week as I have been trying to work on cleaning the house while watching a extra clingy cranky baby I thought about what animal I want to be.
AN OCTOPUS. Have you seen how many legs/arms that creature has? Not one or four BUT 8!

The things I could do with 8 arms. First of all I would be able to fix my hair while still holding my teething monster. Oh the endless possibilities. 

As a first time mom I am having to learn to balance my chores, time with my little man as well as taking care of myself. This past weekend I had mastitis. I was miserable but thanks to my amazing mom I was able to sleep and take care of myself. As I always say being a mom is amazing but you forget what it was like showering in peace or painting your nails. I wont ramble but I will say I need to learn to be more like an octopus.

If I were an octopus I would use all of my 8 arms and laugh at the other creatures who only have two. For now I am a complete mess but I will make due with my two arms.
